Panera Bread Broccoli Cheddar Soup Copycat is the homemade version of this delicious recipe I ordered so many times at Panera Bread. With this easy recipe, you can now have your soup fix anytime you want. Seriously, this is one of the easiest soup recipes you can make at home.

When I’m  having a craving for something warm, delicious and cheesy my go-to is a hearty soup. One of my favorite indulgences is the broccoli cheddar soup in a bread bowl from Panera.  Since I have become an everyday Martha Stewart and have been utilizing my kitchen like there is no tomorrow, I decided to try out this recipe inspired by Panera and make my very own broccoli cheddar soup in a bread bowl.  I was extremely happy with the outcome of of this dish and know you will be too! I know this isn’t exactly diet friendly, but it certainly is delicious for a cheat day meal!

Ingredients

½ chopped onion
¼ cup melted butter
¼ cup of flour
2 cups of half and half
2 cups of chicken stock
2 large bunches of broccoli
2 carrots
¼ teaspoon nutmeg
8 oz shredded sharp cheddar cheese
Salt and pepper to taste
2 rolls of sourdough bread (optional)

Serving size – 2

Step One: Cut carrots in small, thin strips

Step Two: Cut broccoli florets into small pieces

Step Three: Dice onion into small square pieces

Step Four:  Add diced onion into large skillet and saute with 1 tablespoon of butter and cook until transparent

Step Five: Mix the remainder of butter and flour to thicken together, add to pan and cook for about 5 minutes over medium heat

Step Six: Add in half and half stirring constantly

Step Seven: Pour in chicken stock and let simmer for 20 minutes

Step Eight: Over low heat, add in all vegetables and cook for 25 minutes

Step Nine: Add in cheese, nutmeg and salt and pepper to taste

Step Ten: Scoop inside of bread to create a bowl, pour soup into ‘bowl’

Serve and enjoy!
