This recipe is definitely a must have at a summer BBQ. Although, I will admit, I am not very proud of the pictures from this recipe, I do promise it was tastier than it photographed!  I am trying to really get creative in the kitchen and introduce new flavors and proteins into my diet. I am also trying new things that are easily mixed with veggies. So, when I decided to try cooking a quick and simple sausage and veggies dish I was surprised by how delicious the two complemented each other. One important fact about me is that I am a huge lover of spice, the spicier the better!  With that being said, I decided that this dish was definitely going to have a kick. I went ahead and added a little cajun seasoning to this recipe and I was delighted with the combination of flavors from the cajun flavored shrimp to the tasty veggies, it was all so yummy!

Ingredients

1 lb of Shrimp peeled and deveined
14 oz of Pork sausage (or chicken sausage)
2 medium size zucchini, sliced
2 medium size yellow squash, sliced
½ bunch asparagus cut into thirds
2 red bell peppers, diced
2 tbsp olive oil
2 tbsp cajun seasoning
Salt & pepper

Serves 2

Step One: In a large mixing bowl add all of your ingredients; shrimp, sliced sausage, zucchini, yellow squash, asparagus, peppers.  Season to taste with salt and pepper.

Step Two: Add olive oil and cajun seasoning to the bowl and toss until the shrimp, sausage and veggies are fully covered in the seasoning.

Step Three: In a large skillet, add all the ingredients and bring the heat to medium – high.  Shrimp cooks rather fast so be careful not to overcook. This should take about 5-7 minutes, the shrimp will become an opaque pink and the veggies will begin to feel tender.  If  you like your veggies well-down, remove shrimp and sausage and let the veggies brown and add back in the shrimp and sausage for about 2 minutes. 

Step Four: Garnish with fresh parsley if you desire, I am not a big parsley fan so I use it sparingly or not at all!
