If there is one dish that I constantly crave, it’s this Thai basil chicken dish.  There is something about the lightness and kick that makes me crave this sauce. Usually, I order this dish from my local Thai restaurant for lunch, but since I have been doing so well with my cooking I decided to try cooking this meal for myself.  I was delightfully surprised at how easy it was to whip this dish up and how quick it took to cook. It only took 10 minutes out of my day to cook! I love recipes that are quick and easy and satisfy those cravings! I served my chicken basil dish with a side of steamed white rice, but you can really eat this alone or with brown rice.

Ingredients

1 lb of ground chicken
4 tbsp olive oil
3 Thai bird chilies or holland chilies, de-seeded (optional), thinly sliced
3 Shallots, thinly sliced
5 Garlic cloves, thinly sliced
2 teaspoons sugar (or honey)
2 tbsp soy sauce
1 tbsp fish sauce
⅓ cup low sodium chicken broth (or water)
1 Bunch thai basil leaves
1/2 sweet onion

Serves 4

Prep time: 3 minutes
Cook time: 7 minutes

Step One: Heat on high in a large wok; the olive oil, chillies, shallots and garlic and fry in wok for around 2 minutes or until golden. Stirring occasionally will help them along a bit.

Step Two: Add ground chicken and begin to break up into small pieces until the chicken is browned. You are now creating a stir fry with the ingredients in the wok.  

Step Three: Add sugar (or honey), soy sauce and fish sauce to the stir fry in your wok.  Mix together all the ingredients in the wok. Add in your chicken broth (or water) to deglaze the stir fry.  Due to your high heat, the water will evaporate rather quickly, this is normal!

Step Four: Finally, add in your basil leaves and continue stir-frying over high heat until most of the liquid is cooked off and and the basil is wilted.

Ta-da! You now have a gourmet Thai dish cooked and served within 10 minutes!
